Of Kimchi and Kimchi Stew

I'm especially biased when it comes to Korean food. It is true that Korean food have less variations in comparison with Japanese food but something about Korean food makes me keep craving it for more. I'm sure many of you are familiar with Kimchi, which is fermented vegetables with a variety of seasoning. Since the price of Kimchi sold by local Korean restaurants or supermarkets is not exactly cheap, I decided to make my own homemade Kimchi few months ago and began searching for recipe online. There are many variations when it comes to Kimchi making in Korea, the ingredients and seasoning mostly varies depending on the region they live.

Well, all the venturing and researching happens before I get to know Hubby's mother. After meeting her, I've learnt that she loves to make Kimchi as well and this is what I learnt from her Kimchi making experience:

1. Chop one whole Chinese Cabbage into square pieces and start throwing in a generous amount of salt and set it aside for 2 hours. Every piece of cabbage has to be covered with a thin layer salt. Don't worry about the saltiness as the cabbage has to be rinsed with running water after that. The idea of the salting process is to get rid of the water inside the cabbage through osmosis process and the cabbage should have shrunk and become softer after that. Some online recipe mentioned that it has to be soaked in cold salted water for 12 hours to get rid of the bitter taste of the cabbage. I've tried both methods and they both work the same for me. =)

2. Proceed into Kimchi paste making while waiting for the cabbage to be soaked. You can buy Gochujang (Korean red chili pepper paste) at Tesco or any local Korean supermarkets for the kimchi paste but if you couldn't find any, you can always start making your own paste.

3. To make your own paste, you will need Chili flakes and Paprika powder. Easily found at any local supermarkets.

4. Fish sauce.

5. Garlic and ginger.

6. First of all, blend a few cloves of garlic and a few slices of ginger with a food processor or with mortar and pestle until it is paste-like. Put a few spoons of fish sauce and then as much Chili flakes and Paprika powder as you would like. Lastly, a few spoons of sugar or brown sugar to even out the spiciness. Then tadaa, your paste is ready! =D I would prefer to combine both Gochujang and the homemade paste together to accentuate the taste and aroma of the Kimchi. Again, there's no fixed recipe for Kimchi.

And this is how my paste looks like.

7. Not to forget some matchstick sizes pear or apple or radish to compliment the cabbage. You can salt this as well and set it aside for a couple of minutes.

8. After the cabbage is soaked for 2 hours or so (make sure the cabbage is rinsed with running water), squeeze all the water out from the cabbage nicely. Same goes to the pear or apple or radish. Start mixing the paste with the cabbage and pear evenly. Store the Kimchi in a glass bottle or jar and keep it under room temperature for few days for the fermentation process to take place. I usually prefer to let it ferment for one day and the next day I would store my Kimchi in the fridge to slow down the fermentation process as I do not want my Kimchi to be too sour.

My final product. =D

Of course, if your Kimchi is too fermented and became too sour to consume, you can always make delicious Kimchi stew (Kimchi jjigae) with those. Simply add in the Kimchi with some pork belly, onion, garlic and start cooking.

Wednesday with Sakais

Another gathering by the Sakais whenever one of our member is flying off to another piece of land. Had our gathering at Momo Steamboat Buffet, Manjalera Kepong which results in my bloated stomach as you can see in the picture which follows.

Star of the day on the left and tired-looking me who came straight after work.

It's RM28 per head for this all-you-can-grab steamboat buffet. Basically, I just took two plates and piled all mushrooms, bean curd, fish meat, beef and pork slices without thinking and keep noming without noticing that I ate more than everyone else had.

 Group photo.

Playing with smartphones. Sigh, trend nowadays. Girls playing selca with photo-editing software while the guys playing Draw-my-thing.

Sunday with Hubby

I've been busy working lately (same old story) and this is the time when it is so important to spend your weekends well and also when small things in life can make me happy.

Lately, I'm also brewing my very own recipe to happiness, which is to cherish all moments in life and people around you. Whether I iz happy or sad. =D

Finally set foot on the newly opened Muji in Pavilion. I must say Muji's stationery are the ones that tempted me the most. Planing to buy their memo, notebooks, highlighters and pens when my new semester starts because good and well-designed stationary makes writing notes so much more enjoyable.

Spotted some carp streamers (鯉幟, Koinobori, 鲤鱼旗at Tokyo Street as Japanese Children's Day (こどもの日, Kodomo no hi) falls on 5th of May.

Guess what, cap streamers came to my knowledge when I was young because of Doraemon comic books. In one of the chapters, the poor Nobita wants to have a big and beautiful carp streamer like the one at Suneo's house so he begs Doraemon to give him one.

Forced hubby to take a touristy picture.

Cards made by children.

And some couple shots. =D

Embryo rice cooked by Hubby's mother. Love it. For those who have never heard of Embryo rice, Embryo rice is processed brown rice which makes it more edible and easy to digest while maintaining the healthy nutrients of brown rice. A special processor is required to process the brown rice though and I get to see Hubby's mother demonstrating on the spot.

I gotta say my digestive system feels activated after eating Embryo rice for two meals.

 Post abruptly ended again. Bye.

Happy Sunday with Ashie

First of all, Happy Mother's Day! Gonna help my mummy to dye her hair in the late evening as a Mother's Day treat haha.
Started off my Sunday morning with my favourite oatmeal bread and garlic butter.

Mummy bought some Chinese cabbage for me to make Korean Kimchi. Will blog about it once it's done. Currently, it has to be soaked in cold salted water for 12 hours. =)

Ashie is lazing as usual on a hot and sunny afternoon like this. Here are some candid shots I took. =D

Oh and this song currently best describes my longing for more afternoons like this with Ashie, family and hubby or in another word, purified happiness. =)

My eyes keep going to that white face
Why don’t I even get sick of you?
When you slightly smile at me, I really go crazy
How can you be so pretty baby?

How can I explain this feeling?
When I see you, my heart becomes numb and sore

Oh, with what word can I explain you?
All the words of the world is probably not enough

With those legs that are so pretty by just standing still
You walk toward me and you hug me

You know he’s so beautiful
Maybe you will never know
I want to hide you in my embrace

I’m not saying this out of a young heart
But I really want to marry you

Oh, with what word can I explain you?
All the words of the world is probably not enough

With those legs that are so pretty by just standing still
You walk toward me and you hug me

Telling you multiple times is not enough
With this tickling voice
that only knows you
I will sing for you

My heart keeps going to you
I’m really going crazy

Kitty Ashie's Biography

Ashie is my first cat and she's the cleverest, naughtiest and the most playful feline I've ever known.

Name: Ashie
Sex: Female
Age: 1 1/2 years old
Favourite game: Hide and Seek, catch me if you can
Leisure activities: Sleeping, catching bugs, scratching chairs, exploring neighboorhood, roaming around the house, biting my leg, hiding behind and underneath furnitures
Favourite food: Mackerel and only mackerel
Favourite Brand: Whiskas
Things she like: Carpets, clothes cabinet, food
Things she dislike: Taking bath, water spray
Animals she dislike: Dogs

This was Ashie 5 months ago when hubby brought her back from the back alleys of Ampang. Injured and food deprived, my hubby took her for injection and gave her food and shelter. Weeks later, she moved into my house officially and Ashie has grown on me since then.

Awww poor kitty. We had to tie her because we didn't want her to sneak under the bed which contains a lot dust. For two months, she was kept in the store room until we decided to release her when she has grown bigger and unable to sneak underneath beds.

and this is Ashie 5 months later,

Yawns~

Pon Pon! Make way for the royal cat highness!

With hubby. Ashie looking into my camera, awwwww.

I don't know about other cats, but to me Ashie is definitely one of a kind. She informs you whenever she needs to pee, she makes pleading noises when she's hungry and she will wait obediently at her very own food counter while we prepare her food. She snuggles your legs when she wants food. She follows you around. She likes to watch daddy doing housework. She likes the balcony... and so much more.

Before I own a cat, I thought dogs are the best companion to have. I even have a puppy fever photo album on my facebook. But since I have Ashie, things are different now. Cats are so convenient to have, they no need to be toilet trained as it is programmed in their nature. They are not too attention seeking like dogs are. So cats are indeed man's good companion.
Feline fever in the air now. <3

My Home Exercise Programme (HEP) with Hubby

2kg dumbbells my hubby got for me. =D

Kid you not, I'm going to implement a workout plan starting this week. I've been mentioning about working out for ages but it never really happened until my hubby got me those two little dumbbells (2kg is like the weight of heavy red bricks).

As you all know (according to the previous post), my hubby has great passion in burning fats and building muscles and that has motivated me a lot to start a workout plan. Working out is not just about losing weight as most girls are concerned about, it is also about achieving a healthier lifestyle (you will feel great after sweating profusely) and a sense of accomplishment (after achieving the target given). Trust me, there's no such excuse as no time or too busy, all you need is just to spend 10 to 20 minutes per day and you will see the difference (quote by CYK).

For now, my workout plan is as below:

Monday: Upper Limbs
Tuesday: Abs
Wednesday: Chest & Back
Thursday: Cardio
Friday: Full body exercise
Saturday: Stretching
Sunday: Lower Limbs

Looking forward to a better me =).
